VEGAN PEANUT BUTTER ICE CREAM SANDWHICHES


Don’t underestimate the versatility of bananas! Implementing bananas into your desserts makes for a healthy swap with added nutrients. Using them in this spin on a classic ice cream sandwich allows you to indulge in a dessert with natural sugars as well as fiber and protein. It’s vegan, gluten free, and a sweet treat with simple ingredients anyone can enjoy!

Vegan Peanut Butter Banana Sandwich

Makes 2 large or 4 smaller ice cream sandwiches

Peanut Butter Cookie Ingredients

1 cup almond flour

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon salt

½ teaspoon baking soda

1/3 cup peanut butter

2 tablespoons coconut oil

3 tablespoons maple syrup

Banana Ice Cream Ingredients

3 frozen bananas

Directions

  1. Preheat oven to 375 degrees F and spray baking pan with nonstick spray.

  2. Combine almond flour, cinnamon, nutmeg, salt, and baking soda into large bowl and mix together.

  3. Add peanut butter, coconut oil, and maple syrup and mix evenly to form a dough.

  4. Form 4 balls of dough and flatten onto pan to desired thickness.

  5. Bake cookies for 10 minutes and let them cool to room temperature.

  6. Blend frozen bananas in a high-speed blender until ice-cream consistency is formed.

  7. Spread banana “ice cream” onto the bottoms of two cookies and stack remaining cookies on top.

  8. Optional: Sprinkle exterior of ice cream sandwich with superfoods like cacao nibs, bee pollen, or goji berries for added nutrients.

  9. Enjoy right away or freeze to firm bananas and save for a later day.
